Heat a pan and drop 1 tbsp of butter and let it melt. Now add the semolina and mix together with oil. Roast for 2 - 3 minutes, making sure that it doesn't change color. Then put it aside.
Blend the plant based milk and the dragon fruit powder together, making sure that there are no lumps of the color.
Put this mixture in a pan and heat it till it's warm. Now add the pumpkin spice and sugar and stir till the sugar melts, boiling is not required.
Remove this pan from the flame and bring the pot with the semolina back on a medium flame.
Now mix the milk mixture in together into the semolina pot. Also, add the remaining butter. Make sure the flame is medium or low throughout the process. Make sure to stir continuously and slowly to avoid the formation of lumps. The whole process should not take more than 3 - 4 minutes.
Use a spatula to fold it in and it will begin to appear like soft dough. Turn the heat off and remove the pot. Let it cool down ( uncovered ) for 2 minutes. This allows the dough to firmly stick together.
Knead the dough with your hands and roll it out and shape into small-medium sized balls (approx 1 - 1.5 tbsp dough per ball).
For the final step, take each ball in your hand, roll it gently, press it in the centre to make a little pit and fill the nuts in (approx 1/2 tsp per ball). Cover it from all sides and roll into a ball again. Repeat for each ball.
At this stage you can decide if you want to leave it just like this or give it another shape. I formed them into a drop like shape by pressing one end firmly and using a toothpick to design them.
Sprinkle some pistachio powder on top and they are ready to be served!
